Well I'm no good at actually recipes but I can tell you what I did!

Dough was from Trader Joe's, I accidentally got the herb one, (which is good, but not preferred for Deep Dish IMO)

Anyway, I took a brush and oiled the cast iron all the way up on the sides, put my dough in, and really had to squinch it up on the sides...then I prebaked it for 10 minutes @ 450. The package of dough didn't say to do that, but just seemed like a good idea.

Then layered my fresh moz on the bottom, right on top of the dough, and then piled it up on the sides, a top the actual crust.

Put on pepperoni a top the cheese, and then I had sauteed some Spinach / Mushrooms then added my pizza sauce to that.

Spread it out over the top of the pepperoni, sprinkled some fresh grated parm on time, did a *slight* drizzle of EVOO on top and baked at for another 20-25. The last 5 minutes I put the broiler on, I watched it pretty much the entire time. Let it cool for maybe 10 minutes, and then somehow got it out of the cast iron, the key was getting that oil in there first or I would have been stuck to the pan.

Bon appetit!
